A Lighter View Pie, Potato chips, Paddy and Palms

When an office colleague exclaimed, "Today is national pie and potato
chip day!" My first thought was, "What a great combination - sugar,
salt, and fat altogether." She said I could find an online pie
recipe for a potato chip crust with a chocolate-peanut butter filling,
which sounded almost too good to be true.
I later
learned it was national pi day, and boy! What a difference one little
letter makes! It's still possible to find online pie recipes
using potato chips, but what a letdown. The only thing I know
about pi is that it has something to do with the circumference and
radius of a circle, based on a mathematical formula, and I could be
wrong even on that! Somebody somewhere probably holds pi-themed
costume parties, but it's not like St. Paddy's Day where people wear
green, hope for good luck, and probably drink too much alcohol.
However, even
those of us who don't have more orange than leprechaun in our family
tree can get excited about Palm Sunday! It's the observance of
Christ's triumphal entry into Jerusalem in the week leading up to His
crucifixion, which was followed by His miraculous resurrection from the
grave. And since that's the lynchpin of salvation, what's not to
love about that? Some churches burn the palms waved in celebration and
save the remnants to use the following year on Ash Wednesday.
Whether you
ate potato chips or green pancakes, or just spent a moment of quiet
reflection in gratitude for eternal life, there was a lot happening
this week!
