Superintendent presents state of the school district
By Mary Lou Bytof
Brian Eshbach, Northern York County School Superindent.
____ Several hours before the president of the United States delivered the State of the Union address to a joint session of Congress last Tuesday, the Dillsburg Borough Council listened to a presentation on the state of the Northern York County School District delivered by Dr. Eric Eshbach, the district superintendent.
____ Although the superintendent might not have chosen the date to coincide with the president’s address, he said he is making the rounds of the seven local municipalities within the district. Before Eshbach began his presentation full of facts, figures, graphs and charts, School Board President Harry (Bud) Lake introduced the district’s new leader.
____ “We are here today for you to see a lot of data,” Lake told the council, “and to show off the new superintendent.” Eshbach took the helm of the district in late summer, replacing Dr. Linda Lemmon, who retired last June. Unlike many previous superintendents, Eshbach resides in the district. He moved his family from Dover in December 2011.
____ “I did a lot of research on Northern, and what I’ve found was very impressive,” he told the council.

The Art of Making Maple Syrup
By Peggie Williams
Herb Bomberger, chairman of the agricultural activity committee for NYCHAPS, taps a maple tree on the Dill’s Tavern plantation site.
____ The Northern York County Historical and Preservation Society (NYCHAPS) is starting the new year with a new agricultural adventure at Dill’s Tavern. Friday, Feb. 22, is Boiling Day, wherein members of NYCHAPS will spend the day boiling locally collected maple sap into maple syrup. If all goes well, this finished product will be available for tasting and used on pancakes at the breakfast the next morning.
____ “You can’t get it any fresher than that,” said Herb Bomberger, chairman of the agricultural activity committee for NYCHAPS.
____ Several weeks ago, Bomberger tapped both of the large maples on the Dill's Tavern plantation site, as well as other trees around town, to get enough product for the event. It takes 10 gallons of sap to get just one quart of syrup. Sugar maples and red maples make the syrup with the best flavor.
____ Sapping season is between late January and the early weeks of March, when the sap is at its highest sugar content, as the trees begin responding to the lengthening days and warming temperatures and get prepared for flowering in spring. The amount of sap obtained from one tree depends on the size and health of the tree and the weather, with sap flowing faster during warmer weather. The average amount of sap extracted from a tree is about 5 to 15 gallons. However, some trees have been known to produce up to 80 gallons of sap in one year.
